Two working calculators for the numbers taprooms argue about most: what one keg actually returns, and what clean lines cost in hours.

Taprooms argue about two numbers more than any others. The first is what a keg is really worth once foam, tasters and the heel you cannot serve are taken out of the 1,984 ounces a half barrel is supposed to hold. The second is what it costs in labor hours to keep every line clean enough that your beer tastes the way the brewer intended.

Twenty lines times eight minutes of caustic recirculation, plus the half hour it takes to mix solution and break down the pump. Nobody needs an account to do that on paper, so nobody needs one to do it here.

Take the number into a distributor meeting, into a pricing argument about the ten ounce snifter pour, or into the conversation with an owner who wants to stretch the cleaning cycle to twenty eight days.
